Restaurant style Chicken Scampi

 This is a recipe that I tried on Valentine's Day for my Jonathan and I! It was delicious! Enjoy!!!

Ingredients



1 pound raw chicken tenders or strips


1/4 cup all-purpose flour


1 tablespoon olive oil


1 (16 ounce) package spaghetti


1 tablespoon olive oil, divided


1 green bell pepper, cut into 1/2 inch wide strips


1 red bell pepper, cut into 1/2 inch wide strips


1 yellow bell peppers, cut into 1/2 inch wide strips


1 onion, chopped


2 tablespoons chopped garlic


1 1/2 cups four cheese Alfredo sauce


1/2 cup chopped fresh parsley


Directions


1.Place chicken and flour in a large resealable plastic bag; seal bag and shake to coat. Heat 1 tablespoon oil in a large skillet over medium heat. Shake excess flour off chicken and saute in oil for 4 to 5 minutes each side, or until golden brown and cooked through (juices run clear). Remove from skillet and place in a medium bowl; set aside.


2.Bring a large pot of lightly salted water to a boil. Add spaghetti and cook for 8 to 10 minutes or until al dente; drain, reserving 2/3 cup cooking water, and return pasta to pot. Set aside pasta and cooking water.


3.Wipe skillet with paper towel. Heat 1 teaspoon oil in skillet over medium heat. Add green bell pepper, red bell pepper, yellow bell pepper, onion and garlic and saute for 3 minutes. Cover, reduce heat to low and cook 3 minutes more or until vegetables are tender.


4.Stir in Alfredo sauce, cover and heat for 1 to 2 minutes. Remove from heat and add to reserved pasta in pot, then add reserved cooking water and chicken. Toss to mix, pour into serving bowls and sprinkle with fresh chopped parsley.

New Chicken Recipe!

  • 1 large can of French's Fried Onions. (I had more than enough...so if you are doing a dinner for 2 you could possibly use a small can...but a large can will definitely work for a larger portion, too!)
  • 2 Large Boneless Skinless Chicken breast cut in half.
  • 1/4 cup of flour
  • garlic salt to your liking
  • pepper to your liking
Put the onions in a gallon ziploc bag and crush them. Add about 1/4 cup of flour, garlic salt, and pepper. Add your chicken, shake around, and dump all contents into a pyrex. Bake on 400 for about 45 minutes until chicken is done. (Now I have to make extra sure they are done, so I usually cut one of the thickest tenders in half to double check!)

New Post!! Bow Making...

Hey, Y'all! Boy, has it been a while since I have posted on here. It is so good to have this blog up and running again...I love heart and home! Especially since we are getting ready to start our own little home in the coming month...we are knee deep in wedding plans right now, and we are in the process of trying to save money. So pew bows are being made by hand...here is a video we found that was extremely helpful! Granny also uses this style of bows to decorate Christmas presents!

Chocolate Chip Banana Bread...

Chocolate Chip Banana Bread II - All Recipes:
Original Recipe Yield 2 - 9x5 inch loaf
Ingredients
1 cup shortening
2 cups white sugar
2 eggs
2 tablespoons mayonnaise
6 very ripe bananas, mashed
3 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
2 teaspoons baking soda
1 cup semi-sweet chocolate chips
1/2 cup chopped walnuts
Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition. Stir in the mayonnaise and bananas. Stir together the flour, salt, baking powder and baking soda. Blend the flour mixture into the banana mixture; stir just enough to evenly combine. Fold in the chocolate chips and walnuts.
Bake at 350 degrees F (175 degrees C) until a toothpick inserted into the center of the loaf comes out clean, about 50 to 75 minutes. Cool loaf in the pan for 20 minutes before removing to a wire rack to cool completely."

A Daughter of the King...

Do you ever have one of those nights when you can't sleep, and you get all these different things on your mind? Well, last night, that is what happened to me. I was praying about some different things, and I started thinking about the Lord being my Heavenly Father.
 
  For ye have not received the spirit of bondage again to fear; but ye have received the Spirit of adoption, whereby we cry, Abba, Father. Romans 8:15
 
By the grace of God, we have been adopted into the family of God. As ladies, we are considered daughters of the King! What a privilege to know that we have a Father who owns the cattle on a thousand hills! But anyway, getting down to business...I started thinking of whether I had been a good daughter to Him.
 
As a child, if you were raised in a Christian home like I was, one of the first verses that we learned was Ephesians 6:1, "Children, obey your parents in the Lord: for this is right." I wonder how many times that we as children of our heavenly Father have failed to obey this Scripture or how many times have we failed just to honor Him? As I examined my life, I realized that I hadn't been the kind of daughter that I should have been to my Father in Heaven. Trust me, there is always room for improvement. The only time that we will be able to say that we have arrived or become perfect is when we enter our home in Heaven. But until then, let us endeavor to be better daughters not only to our earthly fathers but to our heavenly Father.
